National 4-H Poultry Judging

This manual is a must have if you are a part of or training a poultry judging team. Poultry judging is an excellent opportunity for youth to learn about live birds and the basis of grade and quality of poultry products. This manual was prepared as an aid in teaching beginners, as well as experienced individuals, to properly evaluate e gg-producing hens, and to apply USDA standards in grading ready-to-cook poultry and eggs.
